Marshmallow Pudding

    1 tbsp gelatin
    3/4 c sugar
    3 stiffly beaten egg whites
    3 bananas, mashed (optional)

    Soak gelatin in 1/4 cup cold water 5 minutes. Add 1/4 cup boiling water and sugar. Stir until dissolved. Cool, stirring occasionally until congealing starts. Add egg whites and beat until very light. Add bananas and stir lightly. Chill until set. Serve with whipped cream.
    Serves 4.
