Stir-fried Collard Greens

    This is a quick dish, that goes well with fried rice or white rice. The collard greens could be substituted with Kan-kun, Kale or even green cabbage.

    5 cups Collard Greens, chopped
    1 onion, sliced
    1/4 cup raisins
    1/4 cup cashew nuts
    2-4 tbsp of crushed red chillie (chillie flakes)
    2 tbsp soy sauce
    4 cloves of garlic, sliced
    1 tbsp butter
    1 tbsp oil
    salt

    Fry the garlic and onion in oil. When fragrant, add chillie and cashew nuts. When cashew turns golden brown, add raisin. Fry for a few minutes. Add Collard. Cook for few minutes. Add soy sauce and salt to taste. Serve hot.
