Braised lamb cutlets

    cooking time:1 1/4 hrs.

    need for 4 servings.

    4 large or 8 small cutlets.
    1 1/2 oz. butter
    4 onions
    8 oz tomatoes
    2 tsp chopped parsley
    2 tblsp wine vinegar
    salt &pepper
    little water to boil

    Brown the cutlets on both sides in the butter. Remove from the pan, slice the onions & stir well in to the butter.

    Add the skinned sliced tomatoes,parsley vinerge & seasoning. Place the cutlets on top of the vegetables & pour in a little water. Cover the pan and cook gently for 1 hour.
